CREAMY CHICKEN TORTELLINI SOUP

A yummy blend of chicken, veggies, spices, cheese and tortellini in a thin, creamy broth.

  • 1 tbsp extra virgin olive oil
  • 1 large onion, peeled and chopped in food processor
  • 1 red bell pepper, seeded and chopped in food processor
  • 2 cups carrots, chopped in food processor
  • 4 garlic cloves
  • 1 ¼ pound boneless, skinless chicken breast
  • 8.8 ounce of tortellini pasta
  • ¼-⅓ cup heavy cream
  • 2 tbsp frozen spinach
  • 2 tbsp fresh chopped parsley
  • 1 ½ tsp dried thyme
  • ½ tsp crushed red pepper

ONE POT WHITE CHICKEN LASAGNA SOUP

Creamy, hearty and comforting, but so easy! Full of cheesy layers of noodles, parmesan infused sauce, and Italian spices.

  • 1 pound boneless skinless chicken breasts
  • 3 tbsp olive oil
  • 1 large onion, chopped in food processor
  • 2 carrots, peeled and sliced
  • 1 green bell pepper, chopped in food processor
  • 5 cloves garlic
  • ⅓ cup flour
  • 9-11 cups chicken broth
  • 3 tbsp cornstarch
  • 15 oz can canneli beans
  • 1 tbsp chicken bouillon
  • 1 tsp EACH dried oregano, thyme, salt, pepper
  • 2 bay leaves
  • 10 uncooked lasagna noodles
  • 2-3 cups half and half
  • ½ cup heavy cream
  • 10 oz frozen spinach
  • 1 cup fresh parmesan cheese

CREAMY CHICKEN NOODLE SOUP

Loaded with shredded chicken, plump noodles, and healthy vegetables.

  • 6 cups chicken broth
  • 5 cups water
  • Salt to taste
  • 3-4 chicken thighs skinless
  • 2 tbsp olive oil
  • 3 carrots, 2 grated, 1 sliced
  • 2 medium celery stalks, chopped in food processor
  • 2 cups pasta
  • 1 cup corn
  • 4 tbsp unsalted butter
  • ⅓ cup all-purpose flour
  • ½ cup heavy cream
  • 3 tbsp fresh dill
  • 1 tsp salt-free seasoning

VEGETABLE BEEF SOUP

One of the most classic comfort foods. It will warm your belly and soul!

  • 4 tbsp olive oil
  • 2 cups onion, diced in food processor
  • 2 cups celery, diced in food processor
  • ½ tsp kosher salt
  • 1 pound ground beef
  • 3 cups yellow squash, sliced in food processor
  • 2 cups mushrooms, sliced in food processor
  • ½ tsp ground black pepper
  • 1 tbsp Italian seasoning
  • 1 tbsp dried parsley
  • 1 ½ tsp paprika
  • 3 cloves garlic, grated
  • 64 ounces beef stock
  • 14-15 ounces canned, diced tomatoes (do not drain)
  • 3 cups chopped green beans
  • 2 cups frozen sliced okra
  • Salt and pepper to taste

  • 10 ounce Rotel Tomatoes + Green chilies
  • ¼ cup cilantro

CHEDDAR BROCCOLI SOUP

Creamy, delicious, and made all in ONE POT.

  • 7 tbsp unsalted butter
  • ½ tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • ¾ tsp smoked paprika
  • ¾ tsp ground mustard
  • ⅛ tsp ground cayenne pepper
  • Salt and pepper to taste
  • 6 tbsp flour
  • 32 ounces chicken stock
  • 3 cups half and half
  • 1 bay leaf
  • 6 cups broccoli, chopped in food processor
  • 2 cups carrots, shredded in food processor
  • 12 ounces extra sharp cheddar cheese
